Eco farm Telluris - Medin (Murvica - Zadar, near Adriatic sea) and worms on Croatian menu   more

 

An eco-restaurant has opened in Croatia offering a range of dishes featuring earthworms as the main ingredient.

The restaurant in Zadar claims the earthworms, which are farmed on site, are high in protein and low in fat making them highly nutritious.

Dishes on offer include soup enriched with earthworms, deep fried worms and earthworm cheesecake.

Snail and Californian Red Worms farming is becoming a very interesting and lucrative business. Telluris-Medin, a Zadar based company, owned by Ms. Hana Medin, is the only one in Europe, maybe also in the world to have included segments of the famous ancient Chinese medicine into the gastronomy through consumption of Lumbricus rubellus, the Californian Red Worm, and by promoting the already known and the new snail delicacies.

Hana Medin was lavish with expenses in order to present the earthworms and snails in the best possible light. She rented the whole Arsenal club and designed a programme that was a real spectacle.
One does not often get to see young, muscular, half-naked men guarding a rich buffet table, belly dancers, rock climbers, pythons and beautiful hostesses … together with healthy and exotic food.

“Something for everybody” was obviously the motto of two chefs, one from Croatia and the other from Egypt. Their menu included the beef soup, cream of mushroom soup, tomato soup, summer salad with earthworms, Greek salad, pineapple and orange salad, cucumber salad with yoghurt, cocktail with earthworms, vegetable pyramid with earthworms, browned pasta with earthworms and snails, zucchini risotto with earthworms, stuffed tomatoes with cottage cheese and earthworms, beefsteak roll with prosciutto-smoked ham, gilthead filet with prosciutto and earthworms in lemon sauce, meat and vegetable mousaka with earthworms, turkey stew with vegetables and earthworms, veal medallions in pine nut sauce, cottage cheese and earthworm cake, cottage cheese pancakes in cherry sauce, flambéed bananas with earthworms and fruit salad.

Insect larvae are also on the menus of many countries including South America, where entomophagy is considered usual behavior in gastronomy. Japan and some Pacific islands have very high regard of segmented worms, larvae and arthropods. They even mix them with soy and put them into many healthy juices.    more
